Ingredients

For the Phyllo Crust:

  • Phyllo Dough (8-10 sheets) – Thin and flaky, creating that signature baklava crunch.
  • Melted Butter (½ cup) – To brush the phyllo layers.
  • Ground Cinnamon (½ tsp) – Adds a warm flavor.

For the Cheesecake Filling:

  • Cream Cheese (16 oz, softened) – The creamy base.
  • Greek Yogurt (½ cup) – Adds a slight tang and smooth texture.
  • Honey (⅓ cup) – Natural sweetness that ties in the baklava flavor.
  • Granulated Sugar (½ cup) – To balance the tanginess.
  • Eggs (3 large) – Helps set the cheesecake.
  • Vanilla Extract (1 tsp) – Enhances the flavor.

For the Pistachio Baklava Topping:

 

  • Chopped Pistachios (1 cup, roasted) – Crunchy and nutty.
  • Honey (¼ cup, warm) – For drizzling.
  • Ground Cinnamon (½ tsp) – A warm spice that pairs beautifully with honey.

Instructions

Step 1: Prepare the Phyllo Crust

  1. Preheat your oven to 350°F (175°C).
  2. Brush a 9-inch springform pan with melted butter.
  3. Layer one sheet of phyllo dough, brush with butter, and repeat with 8-10 sheets, slightly overlapping them.
  4. Sprinkle a pinch of cinnamon between layers.
  5. Gently press the phyllo into the pan and trim any excess.

Step 2: Make the Cheesecake Filling
6. In a bowl, beat cream cheese, Greek yogurt, honey, and sugar until smooth.
7. Add eggs one at a time, mixing just until combined.
8. Stir in vanilla extract and pour the filling into the prepared crust.

Step 3: Bake the Cheesecake
9. Bake for 40-45 minutes, or until the center is just set but slightly jiggly.
10. Turn off the oven and let the cheesecake cool inside for 10 minutes, then transfer to a wire rack.

Step 4: Add the Pistachio Baklava Topping
11. Sprinkle chopped pistachios evenly over the cheesecake.
12. Drizzle warm honey over the top.
13. Dust with cinnamon for extra flavor.

14. Refrigerate for at least 4 hours, or overnight for best results.
