Ingredients
Scale
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves (optional)
- 1/4 cup brown sugar
- 2 large eggs
- 1 3/4 cups milk (or your favorite dairy-free alternative)
- 1/4 cup molasses
- 1/4 cup unsalted butter, melted (or coconut oil)
- 1 teaspoon vanilla extract
Instructions
Step 1: Preheat the Waffle Iron
- Preheat your waffle iron according to the manufacturer’s instructions.
Step 2: Mix the Dry Ingredients
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, ginger, cinnamon, nutmeg, cloves, and brown sugar.
Step 3: Mix the Wet Ingredients
- In a separate bowl, whisk together the eggs, milk, molasses, melted butter, and vanilla extract until smooth.
Step 4: Combine Wet and Dry Ingredients
- Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix; a few lumps are okay.
Step 5: Cook the Waffles
- Grease the waffle iron lightly with cooking spray or melted butter. Pour the batter into the waffle iron, using enough to cover the surface without overflowing.
- Cook the waffles until golden brown and crisp, about 4-5 minutes (depending on your waffle iron).
Step 6: Serve and Enjoy
- Serve warm with your favorite toppings like powdered sugar, whipped cream, maple syrup, or fresh fruit.
Notes
- Don’t Overmix: Overmixing the batter can result in dense waffles. Mix just until combined.
- Keep Warm: Place cooked waffles on a baking sheet in a 200°F (90°C) oven to keep them warm while you finish cooking the batch.
- Freeze for Later: Make a double batch and freeze extras for a quick breakfast on busy mornings.
