Instructions
Step 1: Preheat the Oven & Prepare Pans
-
Preheat your oven to 350°F (175°C). Grease and flour two cake pans.
Step 2: Mix the Dry Ingredients
2. In a bowl, whisk together flour, baking powder, baking soda, salt, and finely ground pistachios. Set aside.
Step 3: Cream the Butter & Sugar
3. In a separate bowl, beat softened butter and sugar until light and fluffy (about 2 minutes).
Step 4: Add Eggs & Flavorings
4. Add eggs one at a time, beating well after each. Mix in vanilla and almond extract.
Step 5: Combine Wet & Dry Ingredients
5. Gradually add the dry ingredients to the butter mixture, alternating with milk and lemon juice. Mix until just combined (don’t overmix!).
Step 6: Bake the Cake
6. Divide the batter evenly between the cake pans and smooth the tops.
7. Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
8. Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
Step 7: Make the Creamy Pistachio Frosting
9. In a mixing bowl, beat cream cheese until smooth. Add vanilla and powdered sugar.
10. In a separate bowl, whip heavy cream until stiff peaks form.
11. Gently fold the whipped cream into the cream cheese mixture.
Step 8: Assemble the Cake
12. Place one cake layer on a plate and spread a generous amount of frosting.
13. Add the second cake layer and frost the top and sides evenly.
14. Sprinkle with crushed pistachios for an elegant finish.
Step 9: Chill & Serve
15. Refrigerate the cake for at least 30 minutes before slicing for the best texture. Enjoy!
Notes
Grind pistachios finely to ensure a smooth cake texture.
Use room temperature ingredients for better mixing.
Chill the frosting for easier spreading.
Don’t overmix the batter—gentle folding keeps it light!
