There’s something truly special about the flavors of a classic Caprese salad—fresh tomatoes, creamy mozzarella, and fragrant basil—brought together with the smoky goodness of grilled chicken. This Grilled Chicken Caprese is a perfect, quick, and healthy meal that’s easy enough for weeknights yet elegant enough for special occasions.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 4 slices fresh mozzarella
  • 2 medium tomatoes, sliced
  • 1 cup fresh basil leaves
  • 2 tablespoons balsamic glaze (optional)

Instructions

Step 1: Prep the Chicken

  1. Preheat your grill or grill pan to medium-high heat.
  2. If the chicken breasts are uneven, use a meat mallet to pound them to an even thickness for uniform cooking.
  3. Brush both sides of the chicken with olive oil and season with garlic powder, oregano, salt, and pepper.

Step 2: Grill the Chicken

  1. Place the chicken on the grill and cook for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C).
  2. During the last 2 minutes of cooking, place a slice of mozzarella on top of each chicken breast. Close the grill lid to allow the cheese to melt slightly.

Step 3: Assemble the Caprese

  1. Once the chicken is done, remove it from the grill and let it rest for 2-3 minutes.
  2. Top each piece with 1-2 slices of fresh tomato and a few basil leaves.

Step 4: Drizzle and Serve

  1. Drizzle the balsamic glaze over the chicken if desired.
  2. Serve immediately with your favorite side dishes.
