- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 4 slices fresh mozzarella
- 2 medium tomatoes, sliced
- 1 cup fresh basil leaves
- 2 tablespoons balsamic glaze (optional)
Instructions
Step 1: Prep the Chicken
- Preheat your grill or grill pan to medium-high heat.
- If the chicken breasts are uneven, use a meat mallet to pound them to an even thickness for uniform cooking.
- Brush both sides of the chicken with olive oil and season with garlic powder, oregano, salt, and pepper.
Step 2: Grill the Chicken
- Place the chicken on the grill and cook for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C).
- During the last 2 minutes of cooking, place a slice of mozzarella on top of each chicken breast. Close the grill lid to allow the cheese to melt slightly.
Step 3: Assemble the Caprese
- Once the chicken is done, remove it from the grill and let it rest for 2-3 minutes.
- Top each piece with 1-2 slices of fresh tomato and a few basil leaves.
Step 4: Drizzle and Serve
- Drizzle the balsamic glaze over the chicken if desired.
- Serve immediately with your favorite side dishes.
