For the Beef:

  • 1 lb beef sirloin or flank steak, thinly sliced
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • Juice of 1 lemon
  • 1 tablespoon red wine vinegar
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • Salt and black pepper, to taste

For the Tzatziki Sauce:

  • 1 cup plain Greek yogurt
  • 1/2 cucumber, grated and squeezed to remove excess water
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon fresh dill or mint, chopped
  • Salt, to taste

For Assembly:

  • 46 pita breads, warmed
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 cup shredded lettuce or arugula
  • 1/2 cup crumbled feta cheese (optional)

Instructions

Step 1: Marinate the Beef

  1. In a bowl, mix olive oil, garlic, lemon juice, red wine vinegar, oregano, cumin, paprika, coriander, salt, and pepper.
  2. Add the sliced beef and toss to coat. Cover and refrigerate for at least 30 minutes (or up to 24 hours for more flavor).

Step 2: Prepare the Tzatziki Sauce
3. In another bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, dill (or mint), and a pinch of salt. Mix well and refrigerate until ready to serve.

Step 3: Cook the Beef
4. Heat a skillet or grill pan over medium-high heat. Cook the marinated beef in batches, 2-3 minutes per side, until browned and cooked through. Set aside.

Step 4: Assemble the Gyros
5. Lay a warm pita bread on a flat surface. Spread a generous layer of tzatziki sauce on the bread.
6. Add a portion of cooked beef, then top with cherry tomatoes, red onion, shredded lettuce, and feta cheese (if using).
7. Fold the pita into a wrap and secure with foil or parchment paper for easy eating.
