Instructions

Step 1: Prepare the Zucchini

  1. Preheat your oven to 425°F (220°C) or heat your grill to medium-high.
  2. Lay the zucchini steaks on a baking sheet or a clean surface if grilling.
  3. Brush both sides of the zucchini with olive oil and season generously with salt, pepper, and Italian seasoning.

Step 2: Roast or Grill the Zucchini

  1. If using an oven: Place the zucchini steaks on a baking sheet lined with parchment paper. Roast for 10 minutes until they begin to soften.
  2. If grilling: Place the zucchini steaks directly on the grill grates. Cook for 4-5 minutes on each side until they are tender and have grill marks.

Step 3: Add the Garlic and Cheese

  1. While the zucchini is roasting or grilling, mix the minced garlic with a teaspoon of olive oil in a small bowl.
