Ingredients
Scale
- 4 medium zucchinis: Cut lengthwise into thick “steaks.”
- 3 tablespoons olive oil: For brushing the zucchini.
- 3 garlic cloves, minced: Adds a robust, aromatic flavor.
- 1 teaspoon Italian seasoning: For a hint of herbaceous flavor.
- 1 cup shredded mozzarella cheese: Melts beautifully over the zucchini.
- 1/4 cup grated Parmesan cheese: Adds a savory, nutty touch.
- Salt and pepper, to taste: To enhance the natural flavors.
- Optional garnish: Fresh parsley or basil, chopped, for a pop of color and freshness.
Instructions
Step 1: Prepare the Zucchini
- Preheat your oven to 425°F (220°C) or heat your grill to medium-high.
- Lay the zucchini steaks on a baking sheet or a clean surface if grilling.
- Brush both sides of the zucchini with olive oil and season generously with salt, pepper, and Italian seasoning.
Step 2: Roast or Grill the Zucchini
- If using an oven: Place the zucchini steaks on a baking sheet lined with parchment paper. Roast for 10 minutes until they begin to soften.
- If grilling: Place the zucchini steaks directly on the grill grates. Cook for 4-5 minutes on each side until they are tender and have grill marks.
Step 3: Add the Garlic and Cheese
- While the zucchini is roasting or grilling, mix the minced garlic with a teaspoon of olive oil in a small bowl.
- Remove the zucchini from the oven or grill. Spread the garlic mixture evenly over the top of each steak.
- Sprinkle mozzarella and Parmesan cheese generously over each zucchini steak.
Step 4: Melt the Cheese
- Return the zucchini to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and golden.
- If grilling, close the lid for 2-3 minutes to allow the cheese to melt.
Step 5: Garnish and Serve
- Transfer the zucchini steaks to a serving platter and garnish with fresh parsley or basil. Serve warm.
Notes
- Choose the Right Zucchini: Look for medium-sized zucchinis with firm skin and no soft spots.
- Don’t Overcook: Keep an eye on the zucchini to ensure they stay tender but not mushy.
- Customize the Cheese: Swap mozzarella for cheddar, gouda, or a blend of your favorites for a twist.
- Add a Crunch: Sprinkle panko breadcrumbs over the cheese before baking for an extra crispy topping.
