  • ½ cup crushed pineapple (canned or fresh): Adds sweetness and tropical flavor.
  • 2 tablespoons honey: Balances the tart cranberries.
  • 1 tablespoon soy sauce: For a savory depth.
  • 1 teaspoon Dijon mustard: Adds a subtle tang.
  • 1 tablespoon olive oil: For cooking the salmon.
  • Salt and pepper, to taste: To season the salmon.
  • Fresh parsley or green onions (optional): For garnish.

Instructions

Step 1: Prepare the Sauce

  1. In a medium saucepan, combine the cranberries, crushed pineapple, honey, soy sauce, and Dijon mustard.
  2. Bring the mixture to a simmer over medium heat, stirring occasionally. Cook for 8-10 minutes, or until the cranberries burst and the sauce thickens slightly. Remove from heat and set aside.

Step 2: Cook the Salmon
3. Season the salmon fillets with salt and pepper.
4. Heat olive oil in a non-stick skillet over medium heat.
5. Place the salmon fillets in the skillet, skin-side down if applicable. Cook for 4-5 minutes until the skin is crispy and the salmon is halfway cooked.
6. Flip the fillets and cook for another 3-4 minutes until the salmon is cooked through and flakes easily with a fork.

Step 3: Glaze and Serve
7. Reduce the heat to low and spoon the cranberry and pineapple sauce over the salmon fillets. Let it warm for 1-2 minutes.
8. Transfer the glazed salmon to plates, garnish with fresh parsley or green onions if desired, and serve immediately.
