- 1 1/2 cups all-purpose flour

- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter: Cold and cubed.

For the Filling
- 2 cups fresh or frozen blueberries
- 2 tablespoons granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon lemon zest
For the Crumble Topping
- 1/2 cup all-purpose flour
- 1/3 cup granulated sugar
- 1/4 cup unsalted butter: Cold and cubed.
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C).
- Grease a 9-inch springform pan and set aside.
Step 2: Prepare the Cake Base
- In a mixing bowl, combine the flour, sugar, baking powder, and salt.
- Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Add the egg and vanilla extract, and mix until a soft dough forms.
- Press the dough evenly into the bottom of the prepared springform pan.
Step 3: Make the Filling
- In a separate bowl, toss the blueberries with sugar, cornstarch, and lemon zest.
- Spread the blueberry mixture evenly over the cake base.
Step 4: Prepare the Crumble Topping
- In another bowl, mix the flour and sugar.
- Cut in the butter until the mixture forms pea-sized crumbs.
- Sprinkle the crumble evenly over the blueberry layer.
Step 5: Bake the Cake
- Place the pan in the oven and bake for 40-45 minutes, or until the top is golden brown and the blueberries are bubbling.
- Remove from the oven and let cool in the pan for 10 minutes before releasing the springform.
Step 6: Serve and Enjoy
- Slice the cake and serve warm or at room temperature.
- Optionally, top with whipped cream or a scoop of vanilla ice cream.
