For the Shrimp:
- 1 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon paprika
- 1/4 teaspoon red pepper flakes (optional, for heat)
- Salt and pepper, to taste
For the Orzo:
- 1 cup orzo pasta
- 2 tablespoons butter
- 2 cups chicken broth (or vegetable broth)
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- Juice of 1 lemon (plus zest, optional)
- Salt and pepper, to taste
Instructions
Step 1: Cook the Orzo
- In a medium saucepan, bring the chicken broth to a boil.
- Add the orzo and cook according to package instructions until al dente, about 8-10 minutes. Stir occasionally to prevent sticking.
- Once cooked, drain any excess liquid if needed and stir in 1 tablespoon of butter. Set aside.
Step 2: Cook the Shrimp
- In a large skillet, heat olive oil over medium heat.
- Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- Toss in the shrimp, paprika, red pepper flakes (if using), salt, and pepper. Cook for 2-3 minutes per side until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.
Step 3: Combine Everything
- In the same skillet, melt the remaining tablespoon of butter.
- Add the cooked orzo to the skillet, stirring to coat in the butter.
- Stir in the Parmesan cheese, lemon juice, and parsley. Taste and adjust seasoning with salt and pepper.
- Return the shrimp to the skillet and gently toss to combine with the orzo.
Step 4: Serve
- Transfer the Garlic Shrimp Orzo to serving plates or a large dish. Garnish with additional parsley, lemon zest, or Parmesan if desired. Serve warm.
