For the Shrimp:

  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon paprika
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • Salt and pepper, to taste

For the Orzo:

  • 1 cup orzo pasta
  • 2 tablespoons butter
  • 2 cups chicken broth (or vegetable broth)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon (plus zest, optional)
  • Salt and pepper, to taste

Instructions

Step 1: Cook the Orzo

  1. In a medium saucepan, bring the chicken broth to a boil.
  2. Add the orzo and cook according to package instructions until al dente, about 8-10 minutes. Stir occasionally to prevent sticking.
  3. Once cooked, drain any excess liquid if needed and stir in 1 tablespoon of butter. Set aside.

Step 2: Cook the Shrimp

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  3. Toss in the shrimp, paprika, red pepper flakes (if using), salt, and pepper. Cook for 2-3 minutes per side until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

Step 3: Combine Everything

  1. In the same skillet, melt the remaining tablespoon of butter.
  2. Add the cooked orzo to the skillet, stirring to coat in the butter.
  3. Stir in the Parmesan cheese, lemon juice, and parsley. Taste and adjust seasoning with salt and pepper.
  4. Return the shrimp to the skillet and gently toss to combine with the orzo.

Step 4: Serve

  1. Transfer the Garlic Shrimp Orzo to serving plates or a large dish. Garnish with additional parsley, lemon zest, or Parmesan if desired. Serve warm.

Notes

  • Use Fresh Shrimp: Fresh (or properly thawed) shrimp ensures the best texture and flavor.
  • Don’t Overcook the Shrimp: Keep an eye on the shrimp to avoid them becoming rubbery.
  • Customize the Herbs: Swap parsley for basil or dill to switch up the flavor profile.
