  • 1 ½ lbs chicken breast or thighs, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon paprika
  • ½ teaspoon onion powder
  • Salt and pepper, to taste
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Lemon wedges, for serving
  • Wooden or metal skewers

Instructions

Step 1: Prep the Chicken

  1. In a large bowl, combine olive oil, minced garlic, Parmesan cheese, Italian seasoning, paprika, onion powder, salt, and pepper.
  2. Add the chicken pieces and toss until well coated. Cover and let marinate for at least 30 minutes (or up to 4 hours in the refrigerator).

Step 2: Assemble the Skewers

  1. Thread the marinated chicken pieces onto skewers, leaving a little space between each piece for even cooking.

Step 3: Grill the Skewers

  1. Preheat your grill or grill pan to medium heat. Lightly oil the grates to prevent sticking.
  2. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

Step 4: Garnish and Serve

  1. Remove the skewers from the grill and sprinkle with fresh parsley. Serve immediately with lemon wedges on the side for an extra burst of flavor.

Notes

  • Use Fresh Parmesan: Grated fresh Parmesan melts better and has a richer flavor.
  • Don’t Overcrowd the Skewers: Leave space between pieces to ensure even cooking.
  • Adjust the Seasonings: Feel free to add chili flakes for a spicy kick or more herbs for an extra flavor boost.
  • Oven Option: No grill? Cook the skewers on a baking sheet in a preheated oven at 400°F (200°C) for about 15 minutes, turning halfway through.
