- 1 ½ lbs chicken breast or thighs, cut into 1-inch cubes
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- ½ cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 1 teaspoon paprika
- ½ teaspoon onion powder
- Salt and pepper, to taste
- 1 tablespoon fresh parsley, chopped (for garnish)
- Lemon wedges, for serving
- Wooden or metal skewers
Instructions
Step 1: Prep the Chicken
- In a large bowl, combine olive oil, minced garlic, Parmesan cheese, Italian seasoning, paprika, onion powder, salt, and pepper.
- Add the chicken pieces and toss until well coated. Cover and let marinate for at least 30 minutes (or up to 4 hours in the refrigerator).
Step 2: Assemble the Skewers
- Thread the marinated chicken pieces onto skewers, leaving a little space between each piece for even cooking.
Step 3: Grill the Skewers
- Preheat your grill or grill pan to medium heat. Lightly oil the grates to prevent sticking.
- Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
Step 4: Garnish and Serve
- Remove the skewers from the grill and sprinkle with fresh parsley. Serve immediately with lemon wedges on the side for an extra burst of flavor.
Notes
- Use Fresh Parmesan: Grated fresh Parmesan melts better and has a richer flavor.
- Don’t Overcrowd the Skewers: Leave space between pieces to ensure even cooking.
- Adjust the Seasonings: Feel free to add chili flakes for a spicy kick or more herbs for an extra flavor boost.
- Oven Option: No grill? Cook the skewers on a baking sheet in a preheated oven at 400°F (200°C) for about 15 minutes, turning halfway through.
