    • 3 cups all-purpose flour
    • 1 tablespoon sugar
    • 2 teaspoons salt
    • 1 packet (2 1/4 teaspoons) instant yeast
    • 1 cup warm water (110°F or 43°C)
    • 2 tablespoons olive oil
  • For the Filling:
    • 2 cups shredded sharp cheddar cheese
    • 23 fresh jalapeños, finely diced (adjust to your spice preference)
    • 3 garlic cloves, minced
    • 2 tablespoons fresh parsley or chives, chopped (or 1 tablespoon dried herbs)
    • 1 teaspoon Italian seasoning
    • 1 tablespoon unsalted butter, melted (for brushing)

Instructions

Step 1: Prepare the Dough

  1. In a large bowl, whisk together the flour, sugar, salt, and yeast.
  2. Add the warm water and olive oil. Stir until the dough starts to come together.
  3. Knead the dough for 8-10 minutes by hand or 5-6 minutes in a stand mixer until smooth and elastic.

Step 2: Let the Dough Rise

  1. Place the dough in a lightly oiled bowl, cover with a kitchen towel, and let it rise in a warm place for 1 hour or until doubled in size.

Step 3: Prepare the Filling

  1. In a small bowl, mix the cheddar cheese, diced jalapeños, minced garlic, parsley or chives, and Italian seasoning.

Step 4: Shape the Bread

  1. Punch down the risen dough and turn it out onto a floured surface. Roll into a rectangle about 10×12 inches.
  2. Sprinkle the cheese and jalapeño mixture evenly over the dough.
  3. Roll the dough tightly into a log, pinching the seams to seal.

Step 5: Second Rise

  1. Place the dough seam-side down in a greased 9×5-inch loaf pan. Cover with a towel and let it rise again for 30 minutes.

Step 6: Bake the Bread

  1. Preheat your oven to 375°F (190°C).
  2. Brush the top of the dough with melted butter for a golden crust.
  3. Bake for 30-35 minutes or until the bread sounds hollow when tapped and is golden brown.

Step 7: Cool and Serve

  1. Let the bread cool in the pan for 10 minutes before transferring to a wire rack. Slice and serve warm or at room temperature.

  • Control the Spice: Remove the jalapeño seeds for a milder flavor, or add extra jalapeños for more heat.
  • Use Fresh Cheese: Shred your own cheddar for the best melt and texture.
