- ½ teaspoon onion powder
- Salt and pepper, to taste
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 ½ cups panko breadcrumbs
- Oil for frying (vegetable or canola)
Instructions
- Prepare the Filling:
- In a large bowl, mix the spinach, artichoke hearts, cream cheese, sour cream, mozzarella, Parmesan, garlic powder, onion powder, salt, and pepper until well combined.
- Form the Balls:
- Scoop about 1 tablespoon of the mixture and roll it into a ball. Continue until all the filling is used. Place the balls on a baking sheet and freeze for 30-45 minutes to firm up.
- Coat the Balls:
- Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
- Roll each ball in flour, dip it in the eggs, and coat it with breadcrumbs, pressing gently to adhere.
- Heat the Oil:
- Heat about 2 inches of oil in a frying pan over medium heat to 350°F (175°C).
- Fry the Balls:
- Fry a few balls at a time, being careful not to overcrowd the pan. Cook for 2-3 minutes or until golden brown and crispy.
- Remove with a slotted spoon and drain on paper towels.
