Ingredients

  • All-Purpose Flour (3 ½ cups): The base of our fluffy rolls.
  • Cottage Cheese (1 cup): Adds moisture and tangy flavor.
  • Warm Water (½ cup, about 110°F): Activates the yeast.
  • Sugar (2 tbsp): A little sweetness helps feed the yeast.
  • Active Dry Yeast (1 packet, 2 ¼ tsp): Gives the rolls their rise.
  • Egg (1 large): Adds richness to the dough.
  • Butter (3 tbsp, melted): For added moisture and flavor.
  • Salt (1 tsp): Balances the flavors.
  • Olive Oil or Butter (for brushing the tops): For that golden finish.

Instructions

Step 1: Activate the Yeast

  1. In a small bowl, combine warm water, sugar, and yeast. Let sit for 5–10 minutes until frothy.

Step 2: Mix the Dough

  1. In a large mixing bowl, combine flour and salt.
  2. Add the cottage cheese, egg, melted butter, and the activated yeast mixture.
  3. Mix until a soft, sticky dough forms. If you’re using a stand mixer, use the dough hook attachment.

Step 3: Knead the Dough

  1. Knead the dough by hand on a floured surface for 8–10 minutes or in the stand mixer for 5–7 minutes until smooth and elastic.
  2. Place the dough in a lightly greased bowl, cover with a clean towel, and let rise in a warm place for 1 hour, or until doubled in size.

Step 4: Shape the Rolls

  1. Punch down the dough and divide it into 12 equal pieces.
  2. Roll each piece into a ball and place them on the prepared baking sheet, leaving a little space between each.

Step 5: Second Rise

  1. Cover the rolls with the kitchen towel and let them rise for another 30–40 minutes until puffy.

Step 6: Bake the Rolls

  1. Preheat the oven to 375°F (190°C).
  2. Brush the tops of the rolls with olive oil or melted butter.
  3. Bake for 18–20 minutes, or until golden brown.

Step 7: Serve and Enjoy!
Let the rolls cool slightly before serving. Spread them with butter or enjoy them plain—you can’t go wrong either way!

Notes

  • Don’t Overknead: Knead just until the dough is smooth to keep the rolls light and fluffy.
  • Warm Spot for Rising: If your kitchen is cool, place the dough in a warm oven (around 100°F) to help it rise.
  • Make Ahead: Freeze the shaped, unbaked rolls and bake them fresh when needed!
