  • 1/2 cup cottage cheese, blended until smooth
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 1 tablespoon cornstarch or arrowroot powder (optional, for structure)
  • 1 teaspoon honey or a pinch of sweetener (optional, for a hint of sweetness)

Instructions

Step 1: Prepare the Ingredients

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Separate the egg whites and yolks into two bowls.

Step 2: Whip the Egg Whites

  1. Add the cream of tartar to the egg whites.
  2. Using a hand mixer or stand mixer, beat the egg whites on high speed until stiff peaks form.

Step 3: Mix the Yolks and Cottage Cheese

  1. In the bowl with the egg yolks, add the blended cottage cheese, salt, cornstarch (if using), and honey or sweetener (if using). Mix until smooth.

Step 4: Combine the Mixtures

  1. Gently fold the whipped egg whites into the yolk and cottage cheese mixture in thirds. Use a spatula to fold carefully, maintaining as much air as possible for fluffiness.

Step 5: Shape the Cloud Bread

  1. Scoop the mixture onto the prepared baking sheet, forming 6-8 small rounds or larger pieces, depending on your preference. Use the back of a spoon to shape them evenly.

Step 6: Bake

  1. Bake in the preheated oven for 25-30 minutes, or until golden brown and set.
  2. Remove from the oven and let the cloud bread cool completely on the baking sheet before serving.

Notes

  • Use Room-Temperature Eggs: They whip more easily and create better volume.
  • Don’t Overfold: Mix just until combined to avoid deflating the egg whites.
  • Bake Immediately: The batter will lose volume if it sits too long, so bake right after shaping.
