Ingredients
Scale
- 3 large eggs, separated
- 1/2 cup cottage cheese, blended until smooth
- 1/4 teaspoon cream of tartar
- 1/2 teaspoon salt
- 1 tablespoon cornstarch or arrowroot powder (optional, for structure)
- 1 teaspoon honey or a pinch of sweetener (optional, for a hint of sweetness)
Instructions
Step 1: Prepare the Ingredients
- Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Separate the egg whites and yolks into two bowls.
Step 2: Whip the Egg Whites
- Add the cream of tartar to the egg whites.
- Using a hand mixer or stand mixer, beat the egg whites on high speed until stiff peaks form.
Step 3: Mix the Yolks and Cottage Cheese
- In the bowl with the egg yolks, add the blended cottage cheese, salt, cornstarch (if using), and honey or sweetener (if using). Mix until smooth.
Step 4: Combine the Mixtures
- Gently fold the whipped egg whites into the yolk and cottage cheese mixture in thirds. Use a spatula to fold carefully, maintaining as much air as possible for fluffiness.
Step 5: Shape the Cloud Bread
- Scoop the mixture onto the prepared baking sheet, forming 6-8 small rounds or larger pieces, depending on your preference. Use the back of a spoon to shape them evenly.
Step 6: Bake
- Bake in the preheated oven for 25-30 minutes, or until golden brown and set.
- Remove from the oven and let the cloud bread cool completely on the baking sheet before serving.
Notes
- Use Room-Temperature Eggs: They whip more easily and create better volume.
- Don’t Overfold: Mix just until combined to avoid deflating the egg whites.
- Bake Immediately: The batter will lose volume if it sits too long, so bake right after shaping.
