Ingredients
For the Bread:
- 3 1/2 cups (450g) bread flour
- 2 teaspoons sugar
- 1 1/2 teaspoons salt
- 2 teaspoons instant yeast
- 1 1/4 cups (300ml) warm water
- 2 tablespoons vegetable oil
For the Tiger Topping:
- 1/2 cup (60g) rice flour (essential for the crunch)
- 1/4 cup (60ml) warm water
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 teaspoon vegetable oil
- 1/2 teaspoon instant yeast
Instructions
Step 1: Prepare the Dough
- In a large mixing bowl, combine bread flour, sugar, salt, and instant yeast.
- Add warm water and vegetable oil. Mix until a sticky dough forms.
- Turn the dough onto a floured surface and knead for 8-10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5-6 minutes.
- Shape the dough into a ball, place it in a lightly oiled bowl, and cover with a kitchen towel. Let it rise in a warm spot for 1-2 hours or until doubled in size.
Step 2: Prepare the Tiger Topping
5. In a separate bowl, whisk together rice flour, sugar, salt, yeast, and warm water. Add vegetable oil and stir until it forms a thick paste. Cover and let it rest for 15 minutes.
Step 3: Shape the Bread
6. Once the dough has risen, punch it down to release air. Shape it into a loaf or rolls as desired and place on a baking sheet lined with parchment paper.
7. Cover the dough loosely with a towel and let it rise again for 30-45 minutes until puffy.
Step 4: Apply the Tiger Topping
8. Spread a generous layer of the rice flour topping over the risen dough using a spatula or back of a spoon. The topping should be thick and even to create the crackled crust.
Step 5: Bake the Bread
9. Preheat your oven to 400°F (200°C).
10. Bake the bread for 20-25 minutes (for rolls) or 30-35 minutes (for a loaf) until golden brown and the crust has formed its signature cracks.
11. Remove from the oven and let cool on a wire rack before slicing.
Notes
- Rice Flour is Key: Regular flour won’t give the same crackled effect as rice flour.
- Proper Topping Consistency: The topping should be thick enough to stick but not runny.
- Don’t Skip the Second Rise: It helps the bread achieve its ideal texture and volume.
