Ingredients
Scale
For the Red Velvet Base:
- 1 box red velvet cake mix
- 1 egg
- 1/3 cup vegetable oil
For the Cheesecake Filling:
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
Optional Toppings:
- Powdered sugar (for dusting)
- White chocolate drizzle
Instructions
Step 1: Prepare the Red Velvet Base
- Preheat your oven to 350°F (175°C). Lightly grease your muffin tin or line with cupcake liners.
- In a mixing bowl, combine the red velvet cake mix, egg, and vegetable oil. Mix until a thick dough forms.
Step 2: Press the Base into the Tin
- Scoop about 1 tablespoon of the red velvet dough into each muffin cup (for mini tins) or 2 tablespoons (for standard tins).
- Press the dough down evenly to form a flat layer.
Step 3: Make the Cheesecake Filling
- In a separate bowl, beat the cream cheese, sugar, egg, and vanilla extract until smooth and creamy.
Step 4: Assemble the Cheesecake Bites
- Spoon about 1-2 teaspoons of the cheesecake mixture onto the red velvet layer (mini tin) or 1 tablespoon (standard tin). Spread slightly to cover.
Step 5: Bake
- Bake in the preheated oven for 12-15 minutes (mini tin) or 18-20 minutes (standard tin), until the cheesecake layer is set.
Step 6: Cool and Serve
- Allow the bites to cool completely in the tin before removing. Chill in the refrigerator for at least 1 hour for the best texture.
- Dust with powdered sugar or drizzle with white chocolate before serving, if desired.
Notes
- Use a Cookie Scoop: This makes portioning the dough easier and ensures even layers.
- Don’t Overbake: The cheesecake layer should look set but not browned.
- Chill for Clean Cuts: Refrigerate before serving for firmer bites.
