  • 1/3 cup vegetable oil

  • 1/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

Step 1: Prepare the Red Velvet Base

  1. Preheat your oven to 350°F (175°C). Lightly grease your muffin tin or line with cupcake liners.
  2. In a mixing bowl, combine the red velvet cake mix, egg, and vegetable oil. Mix until a thick dough forms.

Step 2: Press the Base into the Tin

  1. Scoop about 1 tablespoon of the red velvet dough into each muffin cup (for mini tins) or 2 tablespoons (for standard tins).
  2. Press the dough down evenly to form a flat layer.

Step 3: Make the Cheesecake Filling

  1. In a separate bowl, beat the cream cheese, sugar, egg, and vanilla extract until smooth and creamy.

Step 4: Assemble the Cheesecake Bites

  1. Spoon about 1-2 teaspoons of the cheesecake mixture onto the red velvet layer (mini tin) or 1 tablespoon (standard tin). Spread slightly to cover.

Step 5: Bake

  1. Bake in the preheated oven for 12-15 minutes (mini tin) or 18-20 minutes (standard tin), until the cheesecake layer is set.

Step 6: Cool and Serve

  1. Allow the bites to cool completely in the tin before removing. Chill in the refrigerator for at least 1 hour for the best texture.
  2. Dust with powdered sugar or drizzle with white chocolate before serving, if desired.
