Ingredients
For the Caramelized Pecan Topping:
- ½ cup unsalted butter, melted
- 1 cup brown sugar, packed
- 1 cup chopped pecans
- 1 teaspoon vanilla extract
For the Cake:
- 1½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup milk (or buttermilk for a tangy twist)
Instructions
Step 1: Prepare the Caramelized Pecan Topping
- Preheat your oven to 350°F (175°C).
- In a bowl, mix melted butter, brown sugar, chopped pecans, and vanilla extract.
- Pour the mixture into the bottom of a greased 9-inch cake pan, spreading it evenly.
Step 2: Make the Cake Batter
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with milk, starting and ending with the dry ingredients. Mix until just combined.
Step 3: Assemble and Bake
- Carefully spread the cake batter over the pecan topping, smoothing the surface with a spatula.
- Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10-15 minutes, then carefully invert it onto a serving plate.
Notes
- Use Fresh Pecans: For the best flavor and crunch, use fresh, high-quality pecans.
- Grease the Pan Well: Ensure the cake releases smoothly by generously greasing the pan.
- Don’t Overmix: Mix the batter just until combined to keep the cake light and tender.
