Ingredients

Scale

To prepare this dessert, you’ll need the following:

  • Ladyfinger biscuits: About 20-25, for the base and lining.
  • 1 cup lemon curd: Store-bought or homemade.
  • 1 cup heavy whipping cream: Chilled, for a fluffy texture.
  • 1 teaspoon vanilla extract: For added flavor.
  • 2 tablespoons powdered sugar: To sweeten the whipped cream.
  • Zest of 1 lemon: Adds a fresh burst of citrus flavor.
  • 1/4 cup fresh lemon juice: To enhance the tanginess.
  • Fresh fruits or mint leaves (optional): For garnish.

Instructions

Step 1: Prepare the Pan

  1. Line the bottom and sides of your springform pan with parchment paper for easy removal.
  2. Arrange the ladyfinger biscuits upright around the edges of the pan, flat side facing inward.
  3. Cover the bottom of the pan with a layer of ladyfingers.

Step 2: Make the Cream Filling

  1. In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  2. Gently fold in the lemon curd, lemon zest, and lemon juice until smooth and well combined.

Step 3: Assemble the Charlotte

  1. Spread half of the lemon cream filling over the bottom layer of ladyfingers.
  2. Add another layer of ladyfingers over the filling.
  3. Spread the remaining lemon cream filling evenly on top.

Step 4: Chill and Set

  1. Cover the pan with plastic wrap and refrigerate for at least 4-6 hours or overnight. This helps the flavors meld and the dessert to set.

Step 5: Decorate and Serve

  1. Carefully remove the charlotte from the pan and place it on a serving plate.
  2. Garnish with fresh fruits, mint leaves, or extra lemon zest for a pop of color and flavor.
  3. Slice and serve chilled for a perfectly refreshing dessert!

Notes

  • Use Cold Ingredients: Chilled cream whips better and gives a fluffier texture.
  • Homemade Lemon Curd: If you have time, homemade lemon curd can elevate the flavor.
  • Adjust Sweetness: Taste the filling as you go to adjust the sweetness to your preference.
  • Make Ahead: This dessert is ideal for prepping a day in advance, as it tastes even better after chilling.
