Ingredients

  • Cooked Rice (2 cups, preferably day-old)
  • Eggs (2 large)
  • Green Onions (¼ cup, chopped)
  • Garlic (2 cloves, minced)
  • Soy Sauce (2 tbsp)
  • Sesame Oil (1 tbsp)
  • Vegetable Oil (1 tbsp)
  • Salt & Pepper (to taste)

Optional Add-ins:

  • Frozen Peas & Carrots (½ cup)
  • Cooked Chicken or Shrimp (½ cup)
  • Chili Flakes (for extra spice)

Instructions

1. Prepare Your Ingredients

  • If using leftover rice, break up any clumps for even frying.
  • Chop green onions and mince the garlic.

2. Scramble the Eggs

  • Heat 1 tablespoon of vegetable oil in a skillet over medium heat.
  • Crack the eggs into the pan and scramble until just set.
  • Remove from the pan and set aside.

3. Sauté Aromatics & Veggies

  • In the same pan, add minced garlic and sauté for 30 seconds until fragrant.
  • If using vegetables, add them now and stir-fry for 2–3 minutes.

4. Fry the Rice

  • Add the cooked rice to the pan and stir-fry for 3–4 minutes, breaking up any clumps.

5. Add Seasonings & Eggs

  • Pour in soy sauce and sesame oil, stirring to coat the rice evenly.
  • Return the scrambled eggs to the pan and mix well.
  • Taste and season with salt and pepper as needed.

6. Finish & Serve

  • Garnish with chopped green onions and serve hot.

Notes

  • Use Day-Old Rice: Fresh rice can be too moist and sticky. If using fresh rice, spread it on a tray and let it cool before frying.
  • High Heat is Key: Stir-fry on high heat to get that restaurant-style texture.
  • Don’t Overcrowd the Pan: Cook in batches if needed for even frying.
  • Customize It: Add your favorite veggies or protein for a heartier meal.
