Description

If you’re looking for a quick and flavorful meal, these easy chicken kebabs are the perfect choice! Juicy, marinated chicken skewers grilled to perfection with a smoky, slightly charred flavor—perfect for a weeknight dinner or backyard barbecue. Serve them with a fresh salad, warm pita, or a tangy yogurt dip for a meal the whole family will love!


Ingredients

  • Chicken breast or thighs (1 lb, cut into bite-sized cubes)
  • Olive oil (3 tbsp)
  • Greek yogurt (2 tbsp, for extra tenderness)
  • Garlic (3 cloves, minced)
  • Lemon juice (2 tbsp)
  • Paprika (1 tsp, for mild smokiness)
  • Cumin (1 tsp, warm and earthy flavor)
  • Oregano (1 tsp, dried or fresh)
  • Salt & black pepper (to taste)
  • Red onion (1, cut into chunks, optional for skewers)
  • Bell peppers (1-2, any color, cut into chunks, optional for skewers)
  • Wooden or metal skewers

Instructions

1. Prepare the Marinade

In a large mixing bowl, whisk together olive oil, Greek yogurt, minced garlic, lemon juice, paprika, cumin, oregano, salt, and black pepper.

2. Marinate the Chicken

Add the cubed chicken to the marinade, tossing to coat evenly. Cover and let it marinate for at least 20 minutes (or up to 2 hours for deeper flavor).

3. Assemble the Skewers

Thread the marinated chicken onto skewers, alternating with chunks of red onion and bell peppers if using.

4. Grill the Kebabs

  • Grill: Preheat the grill to medium-high heat. Cook the skewers for about 10-12 minutes, turning occasionally, until the chicken is golden brown and fully cooked.
  • Stovetop: Heat a grill pan over medium heat and cook for about 10 minutes, flipping halfway through.
  • Oven: Preheat to 425°F (220°C) and bake on a lined baking sheet for 15-18 minutes, flipping halfway.

5. Serve & Enjoy!

Serve hot with pita bread, a side of rice, or a refreshing tzatziki dip. Garnish with fresh parsley and extra lemon wedges for a bright finish!

  • Use chicken thighs for extra juiciness.
  • Marinate longer for deeper flavor.
  • Don’t overcrowd the skewers; leave space between pieces for even cooking.
  • If using wooden skewers, soak them first to prevent burning.
