  • 4 ripe Roma tomatoes, diced
  • 1/4 cup red onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil (for the topping)
  • 1 tablespoon balsamic vinegar
  • 1/4 cup fresh basil, chopped
  • Salt and pepper, to taste
  • Optional: Grated Parmesan cheese for garnish

Instructions

Step 1: Prepare the Bread

  1. Preheat your oven to 400°F (200°C).
  2. Arrange the sliced baguette pieces on a baking sheet.
  3. Brush the tops lightly with olive oil.
  4. Toast in the oven for 8-10 minutes or until golden and crisp.

Step 2: Make the Tomato Topping

  1. In a mixing bowl, combine the diced tomatoes, red onion, garlic, olive oil, balsamic vinegar, and basil.
  2. Season with salt and pepper to taste. Toss gently to combine.

Step 3: Assemble the Bruschetta

  1. Once the bread is toasted, remove it from the oven and let it cool slightly.
  2. Spoon the tomato mixture onto each slice of bread.
  3. Optional: Sprinkle with grated Parmesan cheese for an extra touch of flavor.
