Description

There’s something irresistibly simple yet elegant about Cucumber Sandwiches. These light, refreshing treats are perfect for tea parties, picnics, or a quick snack. With crisp cucumbers, creamy spread, and soft bread, they strike the perfect balance of flavors and textures. Plus, they’re so easy to make!


Ingredients

  • 8 slices of soft white or whole-grain bread (crusts removed)
  • 1 large cucumber, thinly sliced
  • 4 oz cream cheese, softened
  • 2 tablespoons mayonnaise
  • 1 teaspoon fresh dill, finely chopped (or parsley as an alternative)
  • ½ teaspoon garlic powder (optional)
  • Salt and pepper, to taste

Instructions

Step 1: Prepare the Creamy Spread

  1. In a small mixing bowl, combine the softened cream cheese, mayonnaise, dill, garlic powder (if using), salt, and pepper. Mix until smooth and creamy.

Step 2: Slice the Cucumbers

  1. Use a sharp knife or mandoline slicer to cut the cucumber into very thin slices. Pat them dry with a paper towel to remove excess moisture.

Step 3: Assemble the Sandwiches

  1. Spread a generous layer of the creamy mixture onto one side of each bread slice.
  2. Arrange the cucumber slices evenly over half of the bread slices.
  3. Top with the remaining bread slices, cream-side down, to create sandwiches.

Step 4: Cut and Serve

  1. Use a sharp knife to cut the sandwiches into triangles, rectangles, or small squares.
  2. Serve immediately or cover with a damp paper towel and refrigerate until ready to serve.

  • Dry the Cucumbers: This prevents the sandwiches from becoming soggy.
