There’s something irresistibly simple yet elegant about Cucumber Sandwiches. These light, refreshing treats are perfect for tea parties, picnics, or a quick snack. With crisp cucumbers, creamy spread, and soft bread, they strike the perfect balance of flavors and textures. Plus, they’re so easy to make!
Ingredients
Scale
- 8 slices of soft white or whole-grain bread (crusts removed)
- 1 large cucumber, thinly sliced
- 4 oz cream cheese, softened
- 2 tablespoons mayonnaise
- 1 teaspoon fresh dill, finely chopped (or parsley as an alternative)
- ½ teaspoon garlic powder (optional)
- Salt and pepper, to taste
Instructions
Step 1: Prepare the Creamy Spread
- In a small mixing bowl, combine the softened cream cheese, mayonnaise, dill, garlic powder (if using), salt, and pepper. Mix until smooth and creamy.
Step 2: Slice the Cucumbers
- Use a sharp knife or mandoline slicer to cut the cucumber into very thin slices. Pat them dry with a paper towel to remove excess moisture.
Step 3: Assemble the Sandwiches
- Spread a generous layer of the creamy mixture onto one side of each bread slice.
- Arrange the cucumber slices evenly over half of the bread slices.
- Top with the remaining bread slices, cream-side down, to create sandwiches.
Step 4: Cut and Serve
- Use a sharp knife to cut the sandwiches into triangles, rectangles, or small squares.
- Serve immediately or cover with a damp paper towel and refrigerate until ready to serve.
Notes
- Choose the Right Bread: Use soft, thinly sliced bread for the best texture.
- Dry the Cucumbers: This prevents the sandwiches from becoming soggy.
- Chill Before Serving: Refrigerating the sandwiches briefly helps the flavors meld together.
