Ingredients

  • Chicken Wings (2 lbs, split into flats and drumettes) – The star of the dish!

  • Baking Powder (1 tbsp, aluminum-free) – The secret to crispy skin!

  • Salt (1 tsp) – Enhances flavor.

  • Black Pepper (½ tsp) – Adds a little heat.

  • Garlic Powder (1 tsp) – Brings a savory depth.

  • Paprika (1 tsp, smoked or regular) – Adds color and subtle smokiness.

  • Onion Powder (½ tsp) – Boosts flavor.

  • Olive Oil (1 tbsp) – Helps the seasoning stick.

Optional Sauces & Toppings

  • Buffalo Sauce – Toss in your favorite spicy sauce for a classic wing flavor.

  • Honey Garlic – Drizzle with a mixture of honey and garlic for a sweet-savory twist.

  • Lemon Pepper – Toss with lemon zest and cracked pepper for a zesty touch.


Instructions

Step 1: Preheat the Oven

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and place a wire rack on top.

Step 2: Dry the Wings Thoroughly

Pat the chicken wings very dry with paper towels. This helps the skin get extra crispy when baking.

Step 3: Season the Wings

In a large mixing bowl, toss the wings with baking powder, salt, pepper, garlic powder, paprika, onion powder, and olive oil. Make sure they are evenly coated.

Step 4: Arrange on the Rack

Place the wings skin-side up on the wire rack, making sure they aren’t touching. This allows the air to circulate and crisp them up evenly.

Step 5: Bake Until Crispy

Bake for 45–50 minutes, flipping halfway through, until the skin is crispy and golden brown.

Step 6: Toss in Sauce & Serve

 

Remove from the oven and toss in your favorite sauce, or enjoy them as they are! Serve hot with ranch or blue cheese dressing on the side.

Notes

Use Baking Powder (Not Baking Soda!) – It draws out moisture, making the skin crispier.
Don’t Skip Drying the Wings – Any moisture left will prevent crispiness.
Bake on a Wire Rack – This allows air to circulate for an even crisp.
High Heat is Key – 425°F ensures that crispy, golden skin.
