Description

These Cauliflower Patties are crispy on the outside, tender on the inside, and loaded with flavor. They’re perfect as a snack, side dish, or even a light main course. Plus, they’re super easy to make and customizable with your favorite spices and herbs!

Ingredients

  • 1 medium head of cauliflower, cut into florets (about 4 cups)
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • ½ cup breadcrumbs (or panko for extra crunch)
  • ¼ cup grated Parmesan cheese (optional, for extra flavor)
  • 2 large eggs, beaten
  • 1 tablespoon fresh parsley or cilantro, chopped
  • 1 teaspoon paprika
  • ½ teaspoon cumin (optional)
  • Salt and pepper, to taste
  • 23 tablespoons olive oil or vegetable oil, for frying

Instructions

Steam the Cauliflower

  • Bring a large pot of water to a boil and steam or boil the cauliflower florets for 8-10 minutes until tender.
  • Drain well and let them cool slightly before mashing.

2. Prepare the Cauliflower Mixture

  • In a food processor, pulse the cooked cauliflower until finely chopped (or mash it with a fork for a chunkier texture).
  • Transfer to a mixing bowl and add the diced onion, garlic, breadcrumbs, Parmesan cheese, eggs, parsley, paprika, cumin, salt, and pepper.
  • Mix well until the ingredients are fully combined. If the mixture feels too wet, add more breadcrumbs.

3. Form the Patties

  • Scoop about 2 tablespoons of the mixture and form into small patties, about ½ inch thick. Place them on a plate or baking sheet.

4. Cook the Patties

  • Heat the oil in a non-stick skillet over medium heat.
  • Cook the patties in batches for 3-4 minutes on each side or until golden brown and crispy.
  • Transfer to a paper towel-lined plate to remove excess oil.

5. Serve and Enjoy

  • Garnish with extra parsley or a dollop of sour cream or yogurt for dipping.

Notes

  • Don’t Overcook the Cauliflower: It should be soft enough to mash but not soggy.
  • Chill the Mixture: If the patties feel too soft to handle, refrigerate the mixture for 20-30 minutes before forming them.
  • Customize the Flavor: Add chopped spinach, shredded cheese, or your favorite spices for a twist.
