Ingredients

  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 lb cooked chicken breast, shredded (or rotisserie chicken)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 6 cups chicken broth
  • 1 cup heavy cream
  • 8 oz cream cheese, softened
  • 8 lasagna noodles, broken into pieces
  • 2 cups baby spinach (or kale)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, for garnish

Instructions

Step 1: Sauté Aromatics

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until soft, about 3-4 minutes.
  3. Stir in minced garlic and cook for another 1 minute until fragrant.

Step 2: Build the Base

  1. Add shredded chicken, Italian seasoning, paprika, salt, and pepper to the pot. Stir to combine.
  2. Pour in chicken broth and bring to a gentle boil.

Step 3: Cook the Noodles

  1. Add broken lasagna noodles to the pot. Reduce heat to medium and cook for 10-12 minutes, stirring occasionally, until the noodles are tender.

Step 4: Make it Creamy

  1. Lower the heat and stir in heavy cream and cream cheese until fully melted and incorporated.
  2. Add spinach, mozzarella cheese, and Parmesan cheese, stirring until the cheese is melted and the soup is thick and creamy.

Step 5: Serve

  1. Ladle the soup into bowls, garnish with fresh parsley, and serve hot.

Notes

  • Don’t Overcook the Noodles: Cook them until al dente, as they’ll continue to soften in the soup.
