  • 1/4 cup reserved pasta water: Helps adjust the sauce consistency.

Instructions

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Add the pasta and cook according to the package instructions until al dente.
  3. Reserve 1/4 cup of the pasta water, then drain the rest and set the pasta aside.

Step 2: Make the Sauce
4. In a large skillet or saucepan, melt the butter over medium heat.
5. Add the minced garlic and sauté until fragrant, about 1 minute.
6. Stir in the pumpkin puree and cook for 2 minutes to warm it through.
7. Gradually whisk in the heavy cream, ensuring a smooth mixture.

Step 3: Season and Thicken
8. Add the grated Parmesan cheese, ground nutmeg, salt, and pepper. Stir until the cheese is melted and the sauce thickens slightly.
9. If the sauce is too thick, add the reserved pasta water a little at a time to reach your desired consistency.

Step 4: Combine and Serve
10. Add the cooked pasta to the skillet and toss to coat it evenly in the sauce.
11. Garnish with fresh parsley if desired, and serve hot.

Notes

  • Use Freshly Grated Cheese: It melts better and gives the sauce a smoother texture.
