For the Meatballs:
- 1 lb ground chicken
- ½ cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- ¼ cup grated Parmesan cheese
- 1 tbsp fresh parsley, chopped

- ½ tsp onion powder
- ½ tsp paprika
- 1 tbsp olive oil (for frying)
For the Mushroom Cream Sauce:
- 2 tbsp butter
- 1 tbsp olive oil
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- 1 tsp Dijon mustard
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp fresh parsley (for garnish)
Instructions
Step 1: Make the Chicken Meatballs
- In a large mixing bowl, combine ground chicken, breadcrumbs, egg, garlic, Parmesan, parsley, salt, pepper, onion powder, and paprika. Mix until well combined.
- Roll the mixture into small meatballs (about 1-inch in size).
- Heat olive oil in a large skillet over medium heat.
- Add the meatballs and cook for about 4-5 minutes per side until golden brown and cooked through. Remove and set aside.
Step 2: Prepare the Mushroom Cream Sauce
- In the same skillet, melt butter with olive oil.
- Add the sliced mushrooms and cook for about 5 minutes until softened and golden brown.
- Stir in the garlic and cook for another 30 seconds until fragrant.
- Pour in the chicken broth and scrape up any browned bits from the pan.
- Reduce heat and add heavy cream, Parmesan cheese, Dijon mustard, salt, and black pepper. Stir until smooth and creamy.
- Simmer for 2-3 minutes, allowing the sauce to thicken slightly.
Step 3: Combine and Serve
- Add the meatballs back into the pan, coating them with the sauce.
- Let everything simmer for 2-3 minutes until the meatballs absorb the flavors.
- Garnish with fresh parsley and serve hot.
