For the Meatballs:

  • 1 lb ground chicken
  • ½ cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • ¼ cup grated Parmesan cheese
  • 1 tbsp fresh parsley, chopped
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp onion powder
  • ½ tsp paprika
  • 1 tbsp olive oil (for frying)

For the Mushroom Cream Sauce:

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 tsp Dijon mustard
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp fresh parsley (for garnish)

Instructions

Step 1: Make the Chicken Meatballs

  1. In a large mixing bowl, combine ground chicken, breadcrumbs, egg, garlic, Parmesan, parsley, salt, pepper, onion powder, and paprika. Mix until well combined.
  2. Roll the mixture into small meatballs (about 1-inch in size).
  3. Heat olive oil in a large skillet over medium heat.
  4. Add the meatballs and cook for about 4-5 minutes per side until golden brown and cooked through. Remove and set aside.

Step 2: Prepare the Mushroom Cream Sauce

  1. In the same skillet, melt butter with olive oil.
  2. Add the sliced mushrooms and cook for about 5 minutes until softened and golden brown.
  3. Stir in the garlic and cook for another 30 seconds until fragrant.
  4. Pour in the chicken broth and scrape up any browned bits from the pan.
  5. Reduce heat and add heavy cream, Parmesan cheese, Dijon mustard, salt, and black pepper. Stir until smooth and creamy.
  6. Simmer for 2-3 minutes, allowing the sauce to thicken slightly.

Step 3: Combine and Serve

  1. Add the meatballs back into the pan, coating them with the sauce.
  2. Let everything simmer for 2-3 minutes until the meatballs absorb the flavors.
  3. Garnish with fresh parsley and serve hot.

Notes

  • Use Fresh Herbs: Fresh parsley adds a bright, fresh flavor—don’t skip it!
  • Don’t Overmix the Meatballs: Mixing too much can make them dense.
  • Golden Brown Mushrooms: Cook mushrooms until they are golden for the best flavor.
  • Adjust the Consistency: If the sauce gets too thick, add a splash of chicken broth to thin it out.
