For the Alfredo Sauce:
- 4 tablespoons butter
- 4 cloves garlic, minced
- 3 tablespoons all-purpose flour
- 3 cups milk (whole or 2%)
- 1 cup grated Parmesan cheese

- 1/4 teaspoon black pepper
For the Lasagna Layers:
- 9 lasagna noodles (oven-ready or boiled as per package instructions)
- 2 cups cooked chicken, shredded or diced
- 2 cups mushrooms, thinly sliced
- 1 tablespoon olive oil
- 2 cups mozzarella cheese, shredded
- 1 cup ricotta cheese
- 1/2 cup fresh spinach or parsley, chopped (optional, for freshness)
- Salt and pepper to taste
Instructions
Step 1: Make the Alfredo Sauce
- Melt the butter in a large saucepan over medium heat. Add minced garlic and cook until fragrant (about 1 minute).
- Sprinkle in the flour, whisking constantly to form a paste. Cook for 1-2 minutes to eliminate the raw flour taste.
- Gradually pour in the milk, whisking continuously until the mixture thickens (5-7 minutes).
- Stir in the Parmesan cheese, salt, and pepper. Set the sauce aside.
Step 2: Sauté the Mushrooms
- Heat olive oil in a skillet over medium heat.
- Add sliced mushrooms and a pinch of salt and pepper. Cook until the mushrooms are golden and tender, about 5 minutes. Set aside.
Step 3: Assemble the Lasagna
- Preheat your oven to 375°F (190°C).
- Spread a thin layer of Alfredo sauce on the bottom of the baking dish.
- Place 3 lasagna noodles over the sauce, slightly overlapping.
- Add a layer of shredded chicken, sautéed mushrooms, and a dollop of ricotta cheese. Sprinkle some spinach (if using) and mozzarella.
- Pour a generous amount of Alfredo sauce over the layer.
- Repeat the layering process two more times, ending with noodles on top.
- Cover the top layer with Alfredo sauce and sprinkle with the remaining mozzarella cheese.
Step 4: Bake the Lasagna
- Cover the dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for another 15-20 minutes, or until the top is bubbly and golden.
- Let the lasagna rest for 10 minutes before slicing to allow the layers to set.
