Whether you’re making a romantic dinner, a special meal for family, or just treating yourself, this restaurant-quality dish is surprisingly simple to prepare. It’s packed with protein, healthy fats, and vibrant Mediterranean-inspired flavors, making it as nutritious as it is delicious.

For the Salmon:

  • 4 salmon fillets (skin-on or skinless)

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp paprika

  • 1 tbsp olive oil

  • 2 tbsp butter

For the Creamy Garlic Butter Sauce:

  • 3 tbsp unsalted butter

  • 4 cloves garlic, minced

  • 1 small onion, finely chopped

  • 1 cup cherry tomatoes, halved (or ½ cup sun-dried tomatoes, chopped)

  • 1 cup baby spinach

  • 1 tsp dried oregano

  • ½ tsp crushed red pepper flakes (optional)

  • 1 cup heavy cream (or half & half for a lighter option)

  • ½ cup grated Parmesan cheese

  • ½ cup chicken broth

  • 1 tbsp lemon juice

  • 1 tbsp fresh basil, chopped (for garnish)

For Serving:

  • Fresh basil or parsley for garnish

  • Crusty bread, pasta, or rice


Instructions

Step 1: Sear the Salmon

  1. Pat the salmon fillets dry with a paper towel and season both sides with salt, black pepper, and paprika.

  2. Heat 1 tbsp olive oil and 2 tbsp butter in a large skillet over medium-high heat.

  3. Place the salmon fillets skin-side down (if using skin-on) and cook for 4-5 minutes until golden brown.

  4. Flip the fillets and cook for another 3-4 minutes until cooked through. Remove the salmon from the pan and set aside.

Step 2: Make the Garlic Butter Sauce

  1. In the same skillet, add 3 tbsp butter and sauté the minced garlic and chopped onion for 1-2 minutes until fragrant.

  2. Add the cherry tomatoes (or sun-dried tomatoes) and cook for 3-4 minutes until softened.

  3. Stir in the oregano, red pepper flakes, and baby spinach, cooking until the spinach wilts.

Step 3: Add the Creamy Elements

  1. Pour in the chicken broth, heavy cream, and grated Parmesan cheese. Stir to combine.

  2. Let the sauce simmer for 3-4 minutes, stirring occasionally, until it thickens.

  3. Add the lemon juice and stir again.

Step 4: Return the Salmon & Finish

  1. Return the salmon fillets to the skillet, spooning the sauce over them.

  2. Let the salmon simmer in the sauce for 2-3 minutes, allowing the flavors to meld together.

Step 5: Serve & Enjoy!

 

  1. Garnish with fresh basil or parsley and serve hot with pasta, rice, or crusty bread.

Notes

Pat the Salmon Dry – Ensures a crispy sear when cooking.
Don’t Overcook the Salmon – Remove from heat once it reaches 135-140°F (it will continue cooking slightly off heat).
Use Fresh Garlic – It enhances the rich, aromatic flavors.
Add the Parmesan Gradually – Prevents clumping and ensures a smooth sauce.
Adjust the Sauce Consistency – If too thick, add a splash of broth; if too thin, simmer a little longer.
