Ingredients

Scale
  • 2 large cucumbers, thinly sliced (peeled or unpeeled, as you prefer)
  • 2 cups cherry tomatoes, halved (or 2 large tomatoes, diced)
  • 1/2 small red onion, thinly sliced
  • 1/2 cup plain Greek yogurt or sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice or white vinegar
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste

Instructions

Step 1: Prep the Vegetables

  1. Thinly slice the cucumbers and onions, and halve or dice the tomatoes.
  2. Place all the veggies in a large mixing bowl.

Step 2: Make the Dressing

  1. In a small bowl, whisk together Greek yogurt, mayonnaise, lemon juice, dill, garlic powder, salt, and pepper until smooth and creamy.

Step 3: Combine and Toss

  1. Pour the dressing over the vegetables.
  2. Gently toss to coat the veggies evenly with the dressing.

Step 4: Chill and Serve

  1. Refrigerate the salad for at least 10 minutes to let the flavors meld together.
  2. Serve chilled and garnish with extra fresh dill, if desired.
