Instructions
1. Sauté Aromatics
In a large pot, melt butter over medium heat. Add chopped shallots and minced garlic, sautéing until softened and fragrant (about 3 minutes).
2. Add Tomato Paste & Spices
Stir in tomato paste, saffron (with its soaking water), paprika, salt, and pepper. Cook for 2 minutes until the mixture darkens slightly.
3. Pour in Liquids
Add seafood broth and coconut milk, stirring well. Let it simmer for 10 minutes to allow the flavors to blend.
4. Blend for Smoothness
Use an immersion blender to purée the soup until smooth. If using a regular blender, carefully transfer the bisque in batches and blend, then return to the pot.
5. Thicken the Bisque
Stir in the cornstarch slurry and simmer for another 5 minutes until the bisque slightly thickens.
6. Add Lobster & Lemon Juice
Gently stir in the cooked lobster pieces and lemon juice. Simmer for 2 more minutes to warm the lobster without overcooking.
