  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 medium potatoes, peeled and cubed
  • 4 cups chicken or beef broth
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
  • Optional toppings: Diced pickles, shredded cheese, green onions

Instructions

Step 1: Cook the Beef

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground beef and cook until browned, breaking it apart with a spoon. Remove the beef with a slotted spoon and set aside.

Step 2: Sauté the Vegetables

  1. In the same pot, add the diced onion, garlic, carrots, and celery. Sauté until the vegetables are soft and fragrant, about 5 minutes.

Step 3: Simmer the Soup

  1. Add the cubed potatoes, cooked beef, and broth to the pot.
  2. Bring to a boil, then reduce heat to low and let it simmer for 15-20 minutes, or until the potatoes are tender.

Step 4: Add Creaminess

  1. Stir in the milk, heavy cream, Worcestershire sauce, and Dijon mustard. Simmer for another 5 minutes.
  2. Gradually add the shredded cheddar cheese, stirring constantly until melted and smooth.

Step 5: Thicken the Soup (Optional)

  1. If you prefer a thicker soup, mix the cornstarch with water to create a slurry. Slowly stir it into the soup and let it simmer for a few minutes until thickened.

Step 6: Serve and Enjoy

  1. Ladle the soup into bowls and garnish with your favorite toppings—diced pickles, crumbled bacon, or extra cheese for an extra indulgent touch!
