  • 1 lb beef sirloin or tenderloin, thinly sliced
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 1 medium onion, finely chopped
  • 2 cups cremini or button mushrooms, sliced
  • 2 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 cup sour cream
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste
  • 1 tablespoon fresh parsley, chopped (optional)
  • 12 oz egg noodles or your preferred pasta

Instructions

Step 1: Cook the Beef

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the thinly sliced beef in a single layer and cook for 1-2 minutes per side until browned. Remove the beef from the skillet and set aside.

Step 2: Sauté the Vegetables

  1. In the same skillet, melt the butter over medium heat.
  2. Add the onions and cook for 2-3 minutes until softened.
  3. Stir in the mushrooms and cook for another 5 minutes until they release their juices and begin to brown.
  4. Add the minced garlic and cook for 1 minute until fragrant.

Step 3: Make the Sauce

  1. Sprinkle the flour over the mushroom mixture and stir well. Cook for 1-2 minutes to remove the raw flour taste.
  2. Slowly pour in the beef broth, stirring constantly to prevent lumps.
  3. Simmer the sauce for 5-7 minutes until thickened.

Step 4: Combine and Serve

  1. Reduce the heat to low and stir in the sour cream and Dijon mustard. Mix well.
  2. Add the cooked beef back to the skillet and heat for 2-3 minutes until warmed through. Season with salt and pepper to taste.
  3. Cook the egg noodles according to package instructions, then drain.
  4. Serve the beef stroganoff over the noodles, garnished with fresh parsley if desired.

  • Use Quality Beef: Sirloin or tenderloin ensures tender slices.
  • Don’t Overcook: Quickly sear the beef to keep it juicy and tender.
  • Adjust the Thickness: If the sauce is too thick, add a splash of beef broth.
