- 1 lb beef sirloin or tenderloin, thinly sliced
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 1 medium onion, finely chopped
- 2 cups cremini or button mushrooms, sliced
- 2 garlic cloves, minced
- 2 tablespoons all-purpose flour
- 2 cups beef broth
- 1 cup sour cream
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste
- 1 tablespoon fresh parsley, chopped (optional)
- 12 oz egg noodles or your preferred pasta
Instructions
Step 1: Cook the Beef
- Heat the olive oil in a large skillet over medium-high heat.
- Add the thinly sliced beef in a single layer and cook for 1-2 minutes per side until browned. Remove the beef from the skillet and set aside.
Step 2: Sauté the Vegetables
- In the same skillet, melt the butter over medium heat.
- Add the onions and cook for 2-3 minutes until softened.
- Stir in the mushrooms and cook for another 5 minutes until they release their juices and begin to brown.
- Add the minced garlic and cook for 1 minute until fragrant.
Step 3: Make the Sauce
- Sprinkle the flour over the mushroom mixture and stir well. Cook for 1-2 minutes to remove the raw flour taste.
- Slowly pour in the beef broth, stirring constantly to prevent lumps.
- Simmer the sauce for 5-7 minutes until thickened.
Step 4: Combine and Serve
- Reduce the heat to low and stir in the sour cream and Dijon mustard. Mix well.
- Add the cooked beef back to the skillet and heat for 2-3 minutes until warmed through. Season with salt and pepper to taste.
- Cook the egg noodles according to package instructions, then drain.
- Serve the beef stroganoff over the noodles, garnished with fresh parsley if desired.
