For the Soup:

  • 1 lb ground turkey or chicken (or substitute with ground beef)
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 34 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional, for a bit of heat)
  • 6 cups chicken or vegetable broth
  • 8 oz lasagna noodles, broken into pieces (or use bowtie/farfalle pasta)
  • 1/2 cup heavy cream
  • 1 cup Alfredo sauce (store-bought or homemade)
  • Salt and pepper, to taste

For the Cheese Blend:

  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup ricotta cheese

For Garnish:

  • Fresh basil or parsley, chopped
  • Extra Parmesan cheese for sprinkling

Instructions

  1. Cook the Meat
    • Heat the olive oil in a large pot over medium heat.
    • Add the ground turkey or chicken and cook until browned, breaking it apart with a spoon. Season with a pinch of salt and pepper.
    • Once cooked, transfer the meat to a plate and set aside.
  2. Sauté the Aromatics
    • In the same pot, add the diced onion and cook for 3-4 minutes until softened.
    • Stir in the minced garlic, Italian seasoning, and red pepper flakes (if using) and cook for another minute until fragrant.
  3. Add the Broth and Noodles
    • Pour in the chicken broth and bring to a boil.
    • Add the broken lasagna noodles and cook according to package instructions, about 10-12 minutes, or until al dente. Stir occasionally to prevent sticking.
  4. Make It Creamy
    • Once the noodles are cooked, lower the heat to a simmer.
    • Stir in the cooked ground meat, heavy cream, and Alfredo sauce.
    • Simmer for 3-5 minutes until the soup is warmed through and creamy. Taste and adjust seasoning with salt and pepper as needed.
  5. Add the Cheese Blend
    • In a small bowl, mix the mozzarella, Parmesan, and ricotta cheeses.
    • Spoon dollops of the cheese blend into the soup, letting it melt slightly for gooey, cheesy bites.
  6. Serve and Garnish
    • Ladle the soup into bowls and garnish with fresh basil or parsley.
    • Sprinkle extra Parmesan cheese on top for a finishing touch.

  • Don’t Overcook the Pasta: Cook the noodles until just al dente to prevent them from becoming mushy.
