Ingredients
Scale
For the Soup:
- 1 lb ground turkey or chicken (or substitute with ground beef)
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3–4 garlic cloves, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes (optional, for a bit of heat)
- 6 cups chicken or vegetable broth
- 8 oz lasagna noodles, broken into pieces (or use bowtie/farfalle pasta)
- 1/2 cup heavy cream
- 1 cup Alfredo sauce (store-bought or homemade)
- Salt and pepper, to taste
For the Cheese Blend:
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup ricotta cheese
For Garnish:
- Fresh basil or parsley, chopped
- Extra Parmesan cheese for sprinkling
Instructions
- Cook the Meat
- Heat the olive oil in a large pot over medium heat.
- Add the ground turkey or chicken and cook until browned, breaking it apart with a spoon. Season with a pinch of salt and pepper.
- Once cooked, transfer the meat to a plate and set aside.
- Sauté the Aromatics
- In the same pot, add the diced onion and cook for 3-4 minutes until softened.
- Stir in the minced garlic, Italian seasoning, and red pepper flakes (if using) and cook for another minute until fragrant.
- Add the Broth and Noodles
- Pour in the chicken broth and bring to a boil.
- Add the broken lasagna noodles and cook according to package instructions, about 10-12 minutes, or until al dente. Stir occasionally to prevent sticking.
- Make It Creamy
- Once the noodles are cooked, lower the heat to a simmer.
- Stir in the cooked ground meat, heavy cream, and Alfredo sauce.
- Simmer for 3-5 minutes until the soup is warmed through and creamy. Taste and adjust seasoning with salt and pepper as needed.
- Add the Cheese Blend
- In a small bowl, mix the mozzarella, Parmesan, and ricotta cheeses.
- Spoon dollops of the cheese blend into the soup, letting it melt slightly for gooey, cheesy bites.
- Serve and Garnish
- Ladle the soup into bowls and garnish with fresh basil or parsley.
- Sprinkle extra Parmesan cheese on top for a finishing touch.
Notes
- Don’t Overcook the Pasta: Cook the noodles until just al dente to prevent them from becoming mushy.
- Use Fresh Herbs: Fresh basil or parsley will give this dish a bright, fresh flavor.
- Make It Spicier: Add extra red pepper flakes or a dash of hot sauce if you like a kick of heat.
- Homemade Alfredo Sauce: For even more flavor, try making your own Alfredo sauce from scratch using butter, cream, and Parmesan.
