For the Biscuits:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ cup cold unsalted butter, cubed
  • 1 cup shredded sharp cheddar cheese
  • ¾ cup whole milk

For the Crab Filling:

  • 1 cup cooked crab meat, finely chopped
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Old Bay seasoning
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon lemon juice

For the Lemon Butter:

  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • ½ teaspoon garlic powder

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2: Make the Biscuit Dough
2. In a large mixing bowl, whisk together the flour, baking powder, garlic powder, and salt.
3. Cut in the cold butter with a pastry cutter or fork until the mixture resembles coarse crumbs.
4. Stir in the shredded cheddar cheese.
5. Add the milk gradually, mixing until just combined. Avoid overmixing for tender biscuits.

Step 3: Prepare the Crab Filling
6. In a small bowl, mix the crab meat, mayonnaise, Dijon mustard, Old Bay seasoning, parsley, and lemon juice until well combined.

Step 4: Assemble the Biscuits
7. Scoop a heaping tablespoon of biscuit dough and flatten it slightly in your hand.
8. Place about 1 teaspoon of crab filling in the center, then top with another small piece of dough. Pinch the edges together to seal.
9. Place the filled biscuits onto the prepared baking sheet, spacing them about 2 inches apart.

Step 5: Bake the Biscuits
10. Bake for 12-15 minutes, or until the tops are golden brown.

Step 6: Make the Lemon Butter
11. While the biscuits are baking, stir together the melted butter, lemon zest, lemon juice, and garlic powder in a small bowl.

Step 7: Glaze and Serve
12. Remove the biscuits from the oven and brush generously with the lemon butter. Serve warm and enjoy!

  • Use Cold Butter: Cold butter ensures flaky layers. Keep it chilled until ready to use.
  • Don’t Overwork the Dough: Mix until just combined to avoid tough biscuits.
  • Fresh Crab is Best: If available, fresh crab meat will elevate the flavor, but canned works in a pinch.
