  • 1 cup cooked crab meat: Fresh or canned, picked over for shells.
  • 1 cup shredded Monterey Jack cheese: Or your favorite melty cheese.
  • 4 medium flour tortillas: Soft and pliable, perfect for folding.
  • 1 small bell pepper, finely diced: Adds a nice crunch and sweetness.
  • 2 green onions, chopped: For a fresh, mild onion flavor.
  • 1 tablespoon butter or oil: For toasting the quesadillas.
  • Salt and pepper, to taste: To enhance the flavors.
  • Optional: Fresh cilantro, chopped, for garnish.

Instructions

Step 1: Prepare the Filling

  1. In a mixing bowl, combine the crab meat, shredded cheese, diced bell pepper, green onions, salt, and pepper. Mix until evenly distributed.

Step 2: Assemble the Quesadillas
2. Lay out the tortillas on a flat surface.
3. Spread a generous amount of the crab mixture over one half of each tortilla, then fold the other half over to form a half-moon shape.

Step 3: Cook the Quesadillas
4. Heat a non-stick skillet or griddle over medium heat and add the butter or oil.
5. Place the quesadillas in the skillet and cook for 2-3 minutes on each side until golden brown and the cheese is melted.

Step 4: Slice and Serve
6. Remove the quesadillas from the skillet and let them cool for a minute.
7. Slice each quesadilla into wedges and garnish with fresh cilantro, if desired.

Notes

  • Use Fresh Crab: For the best flavor, opt for fresh crab meat if available. If using canned, drain it well to remove excess liquid.
