Ingredients
- 4 large bell peppers (any color: red, green, yellow, or orange)
- 8 oz lump crab meat (fresh or canned)
- 8 oz cooked shrimp (peeled, deveined, and chopped)
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup cooked white or brown rice
- ½ cup cream cheese, softened
- ¼ cup mayonnaise
- 1 teaspoon Old Bay seasoning (or your favorite seafood seasoning)
- ½ teaspoon paprika
- 2 tablespoons fresh parsley, chopped (plus more for garnish)
- 1 cup shredded mozzarella or cheddar cheese
- Salt and pepper, to taste
- Lemon wedges for serving (optional)
Instructions
Step 1: Prep the Bell Peppers
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- Brush the peppers with olive oil and place them upright in a baking dish. Bake for 10 minutes to soften slightly.
Step 2: Make the Seafood Filling
4. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add chopped onion and garlic, sauté until softened (about 3-4 minutes).
5. In a large bowl, combine the crab meat, chopped shrimp, cooked rice, softened cream cheese, mayonnaise, Old Bay seasoning, paprika, parsley, salt, and pepper. Mix well until all ingredients are evenly combined.
Step 3: Stuff the Peppers
6. Remove the peppers from the oven. Carefully spoon the crab and shrimp mixture into each bell pepper, pressing it down gently to fill them completely.
7. Top each pepper with shredded mozzarella or cheddar cheese.
Step 4: Bake
8. Place the stuffed peppers back into the oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
Step 5: Serve
9. Remove the peppers from the oven and garnish with extra chopped parsley. Serve with lemon wedges for a fresh, tangy finish.
Notes
- Use Fresh Seafood: If possible, fresh crab and shrimp will give the best flavor. However, high-quality canned or frozen seafood works too.
- Customize the Seasoning: Add a dash of hot sauce or a sprinkle of cayenne pepper for a spicy kick.
- Make it Ahead: You can prepare the filling and stuff the peppers a day ahead. Just refrigerate them until ready to bake.
