Ingredients

  • 3 cups all-purpose flour
  • 1 packet (2 1/4 teaspoons) instant yeast
  • 1 teaspoon salt
  • 2 tablespoons sugar (optional for a hint of sweetness)
  • 1 cup cottage cheese (small curd or large curd, your choice)
  • 1/4 cup warm water (110°F/43°C)
  • 1/4 cup unsalted butter, melted and cooled
  • 1 large egg, beaten
  • 1/4 cup milk (plus more if needed)

Instructions

Step 1: Prepare the Dough

  1. In a large bowl, combine the flour, instant yeast, salt, and sugar (if using). Mix well.
  2. In a separate bowl, mix the warm water, melted butter, beaten egg, and milk. Stir in the cottage cheese until well combined.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until a shaggy dough forms.

Step 2: Knead the Dough

  1. Turn the dough onto a lightly floured surface and knead for about 8-10 minutes until smooth and elastic.
  2. If the dough is too sticky, sprinkle in a little more flour, 1 tablespoon at a time.

Step 3: First Rise

  1. Place the dough in a lightly greased bowl and cover it with a clean kitchen towel.
  2. Let it rise in a warm place for about 1 to 1 1/2 hours, or until it doubles in size.

Step 4: Shape and Second Rise

  1. Punch down the dough and shape it into a loaf. Place it into a greased loaf pan.
  2. Cover the pan with the towel and let the dough rise again for 30-45 minutes, or until it rises just above the rim of the pan.

Step 5: Bake the Bread

  1. Preheat your oven to 375°F (190°C).
  2. Bake the bread for 25-30 minutes, or until the top is golden brown and the bread sounds hollow when tapped.

Step 6: Cool and Serve

  1. Remove the bread from the pan and let it cool on a wire rack before slicing.

Notes

  • Room Temperature Ingredients: Use room-temperature cottage cheese for better dough consistency.
  • Customize It: Add fresh herbs, shredded cheese, or seeds for a flavorful twist.
