Description

Ingredients

  • 8 slices rye bread (marbled rye is a classic choice)
  • 1 lb corned beef, thinly sliced
  • 8 slices Swiss cheese
  • 1 cup sauerkraut, drained and patted dry
  • ½ cup Thousand Island dressing (or Russian dressing, if preferred)
  • 2 tablespoons butter, softened

Instructions

Step 1: Prepare the Ingredients

  1. Preheat a skillet or griddle over medium heat.
  2. Butter one side of each slice of rye bread.

Step 2: Assemble the Sandwich 3. Place 4 slices of bread, buttered side down, onto the skillet. 4. Spread a generous layer of Thousand Island dressing on the unbuttered side of the bread in the skillet. 5. Add a slice of Swiss cheese, followed by a layer of corned beef and sauerkraut. 6. Top with another slice of Swiss cheese and place the remaining bread slices, buttered side up, on top.

Step 3: Cook the Sandwich 7. Cook the sandwiches for 3-4 minutes on each side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.

Step 4: Serve and Enjoy 8. Remove the sandwiches from the skillet, slice them in half, and serve warm.

Notes

  • Drain the Sauerkraut Well: Excess liquid can make your sandwich soggy, so be sure to pat the sauerkraut dry.
  • Toast to Perfection: Cook the sandwich over medium heat to ensure the bread toasts evenly and the cheese melts without burning.
  • Switch Up the Dressing: If you prefer a spicier kick, try a chipotle mayo or Dijon mustard instead of Thousand Island dressing.
