  • 4 large egg yolks

  • 1 tablespoon lemon zest

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted

Instructions

Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C).

Step 2: Make the Crust

  1. In a bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until evenly combined.
  2. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan to form an even crust.
  3. Bake the crust for 8-10 minutes, then remove from the oven and let it cool slightly.

Step 3: Prepare the Filling

  1. In a large bowl, whisk together the sweetened condensed milk, egg yolks, lemon juice, and lemon zest until smooth and creamy.
  2. Pour the filling into the prepared crust, spreading it evenly.

Step 4: Bake the Pie
Bake the pie for 15-20 minutes, or until the filling is just set and slightly jiggles in the center. Avoid overbaking.

Step 5: Cool and Chill
Remove the pie from the oven and let it cool to room temperature. Cover and refrigerate for at least 2 hours (or overnight) to allow the filling to fully set.

Step 6: Add Toppings and Serve
Top the pie with whipped cream or meringue, if desired, and garnish with lemon slices or zest. Slice and enjoy!
