    • 1 1/2 cups all-purpose flour
    • 2 tablespoons granulated sugar
    • 1 tablespoon baking powder
    • 1/4 teaspoon salt
    • 1 cup brewed coffee (room temperature)
    • 1/2 cup milk (or almond milk)
    • 1 large egg
    • 1/4 cup melted butter or vegetable oil
    • 1 teaspoon vanilla extract
    • 1/2 cup chocolate chips (plus more for topping, if desired)
  • For Garnish (Optional):
    • Whipped cream
    • Chocolate syrup
    • Shaved chocolate or cocoa powder dusting

Instructions

Step 1: Mix the Dry Ingredients

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.

Step 2: Mix the Wet Ingredients
2. In a separate bowl, combine the brewed coffee, milk, egg, melted butter, and vanilla extract.

Step 3: Combine Wet and Dry Ingredients
3. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix—the batter should be a little lumpy.
4. Gently fold in the chocolate chips.

Step 4: Cook the Pancakes
5. Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.
6. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
7. Flip the pancake and cook for another 1-2 minutes until golden brown.

Step 5: Serve
8. Stack the pancakes on a plate and top with whipped cream, extra chocolate chips, and a drizzle of chocolate syrup if desired.

Notes

  • Let the Coffee Cool: Make sure the brewed coffee is room temperature so it doesn’t cook the egg or make the batter too thin.
  • Don’t Overmix: A few lumps in the batter are okay! Overmixing can make the pancakes dense.
  • Use High-Quality Chocolate: Semi-sweet or dark chocolate chips work best for a rich flavor.
