Ingredients
- For the Pancakes:
- 1 1/2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 cup brewed coffee (room temperature)
- 1/2 cup milk (or almond milk)
- 1 large egg
- 1/4 cup melted butter or vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips (plus more for topping, if desired)

- Whipped cream
- Chocolate syrup

Instructions
Step 1: Mix the Dry Ingredients
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Step 2: Mix the Wet Ingredients
2. In a separate bowl, combine the brewed coffee, milk, egg, melted butter, and vanilla extract.
Step 3: Combine Wet and Dry Ingredients
3. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix—the batter should be a little lumpy.
4. Gently fold in the chocolate chips.
Step 4: Cook the Pancakes

6. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
7. Flip the pancake and cook for another 1-2 minutes until golden brown.

- Let the Coffee Cool: Make sure the brewed coffee is room temperature so it doesn’t cook the egg or make the batter too thin.
