  • 3 tablespoons pure maple syrup
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg (optional)
  • 1/4 teaspoon salt
  • Optional: chopped pecans or walnuts for topping

Instructions

Step 1: Prep the Oven and Baking Sheet

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or aluminum foil for easy cleanup.

Step 2: Toss the Sweet Potatoes

  1. In a large mixing bowl, combine the diced sweet potatoes, olive oil, maple syrup, cinnamon, nutmeg (if using), and salt.
  2. Toss well to ensure the sweet potatoes are evenly coated.

Step 3: Arrange on Baking Sheet

  1. Spread the sweet potatoes in a single layer on the prepared baking sheet. Be sure they aren’t overcrowded to allow even roasting.

Step 4: Roast to Perfection

  1. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the sweet potatoes are tender and caramelized.

Step 5: Garnish and Serve

  1. If desired, sprinkle with chopped pecans or walnuts during the last 5 minutes of roasting for added crunch.
