Ingredients
Scale
For the Crust:
- 2 cups chocolate cookie crumbs (such as chocolate graham crackers or Oreo cookies)
- 1/4 cup unsalted butter, melted
For the Filling:
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon peppermint extract
- 8 oz semi-sweet chocolate, melted and slightly cooled
- 1/2 cup heavy cream
For the Topping:
- 1 cup whipped cream
- 1/4 cup crushed candy canes or peppermint candies
- Optional: chocolate shavings or drizzle for garnish
Instructions
Step 1: Prepare the Crust
- Preheat your oven to 325°F (160°C).
- In a bowl, mix the chocolate cookie crumbs and melted butter until combined.
- Press the mixture evenly into the bottom of a greased springform pan. Bake for 8 minutes, then let cool.
Step 2: Make the Filling
- In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy.
- Add the eggs, one at a time, mixing well after each addition.
- Mix in the peppermint extract, melted chocolate, and heavy cream until fully incorporated.
- Pour the filling over the cooled crust and smooth the top.
Step 3: Bake the Cheesecake
- Place the springform pan in a larger roasting pan. Pour hot water into the roasting pan until it reaches halfway up the sides of the springform pan (water bath method).
- Bake for 50-60 minutes, or until the center is just set and slightly jiggly.
- Turn off the oven, crack the door slightly, and let the cheesecake cool inside for 1 hour.
Step 4: Chill and Decorate
- Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight.
- Before serving, top with whipped cream, crushed peppermint candies, and optional chocolate garnish.
Notes
- Room Temperature Ingredients: Use softened cream cheese and eggs for a smooth filling.
- Don’t Overmix: Overmixing can incorporate too much air, causing cracks in the cheesecake.
- Water Bath Method: This helps prevent cracks and ensures even baking.
- Use a Sharp Knife for Slicing: Dip it in warm water and wipe between cuts for clean slices.
