Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 3/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup cocoa powder
- 1 cup mini marshmallows
- 1 cup chocolate chips or chunks
- 1/4 cup milk (optional, if dough feels too stiff)
Instructions
Step 1: Prepare the Dough
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Step 2: Mix Dry Ingredients
- In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cocoa powder.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If the dough feels stiff, mix in the milk a tablespoon at a time.
Step 3: Add Mix-Ins
- Gently fold in the chocolate chips and mini marshmallows, ensuring they are evenly distributed.
Step 4: Shape and Bake
- Use a cookie scoop or tablespoon to drop dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set and the centers look slightly underbaked (they’ll firm up as they cool).
Step 5: Cool and Enjoy
- Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
- Serve warm for gooey marshmallow bliss, or let them cool completely for a firmer texture.
Notes
- Chill the Dough: If your dough is too soft, chill it for 20-30 minutes before baking.
- Use Quality Chocolate: Choose high-quality chocolate chips or chunks for a richer flavor.
- Don’t Overbake: These cookies should be slightly underbaked for the perfect soft texture.
- Customize Your Add-Ins: Add crushed graham crackers for a s’mores twist or nuts for extra crunch.
