  • 3 ripe bananas, mashed
  • ⅓ cup melted butter or neutral oil
  • ½ cup brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 tablespoon instant espresso powder
  • 1 cup all-purpose flour
  • ½ cup cocoa powder (unsweetened)
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup semi-sweet chocolate chips (plus extra for topping)

Instructions

Step 1: Prepare the Pan

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.

Step 2: Mix Wet Ingredients
3. In a large mixing bowl, mash the bananas until smooth.
4. Add melted butter, brown sugar, eggs, vanilla extract, and espresso powder. Whisk until well combined.

Step 3: Add Dry Ingredients
5. Sift in the flour, cocoa powder, baking soda, and salt. Gently fold the dry ingredients into the wet mixture until just combined. Avoid overmixing.

Step 4: Incorporate Chocolate Chips
6. Fold in the chocolate chips, reserving a few for topping.

Step 5: Bake the Banana Bread
7. Pour the batter into the prepared loaf pan and sprinkle the reserved chocolate chips on top.
8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

Step 6: Cool and Serve
9. Let the banana bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice and enjoy!
