- ¾ cup hot water (just below boiling)
- ½ tsp salt
- ½ cup chopped green onions (scallions)
- 2 tbsp vegetable oil (for brushing)
- ¼ cup sesame oil (for flavor)
- Extra flour for dusting
- 3 tbsp vegetable oil (for frying)
Dipping Sauce (Optional):
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- ½ tsp sesame oil
- ½ tsp sugar
- ½ tsp chili flakes (optional)
- 1 tsp chopped garlic
Instructions
Step 1: Prepare the Dough
- In a mixing bowl, add the flour and salt.
- Slowly pour in the hot water while stirring with chopsticks or a spoon.
- Once the dough starts coming together, knead it by hand for about 8 minutes until it becomes smooth.
- Cover with a damp towel and let it rest for 30 minutes.
Step 2: Shape the Pancakes
- Divide the dough into 4 equal portions.
- Lightly dust a surface with flour and roll out one piece into a thin rectangle.
- Brush the surface with a little vegetable oil and sesame oil.
- Sprinkle evenly with chopped green onions.
- Roll the dough into a log, then coil it into a spiral (like a cinnamon roll).
- Flatten it gently with your hand, then roll it out again into a thin round pancake (about 6 inches wide).
- Repeat with the remaining dough.
Step 3: Cook the Pancakes
- Heat 1 tablespoon of vegetable oil in a pan over medium heat.
- Place a pancake in the pan and cook for 2-3 minutes until golden brown.
- Flip and cook for another 2-3 minutes, pressing gently to ensure even cooking.
- Repeat with the remaining pancakes, adding more oil as needed.
Step 4: Make the Dipping Sauce (Optional)
- Mix all dipping sauce ingredients in a small bowl.
- Serve alongside the hot pancakes.
