  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper, to taste

For the Shrimp:

  • 1 lb large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions

Step 1: Prepare the Chimichurri Sauce

  1. In a mixing bowl, combine parsley, cilantro, minced garlic, olive oil, red wine vinegar, lemon juice, red pepper flakes, salt, and pepper.
  2. Stir to combine. For a smoother texture, blend the ingredients in a food processor until coarsely combined, but don’t over-process.

Step 2: Marinate the Shrimp

  1. Place the shrimp in a bowl and season with salt and pepper.
  2. Add 2-3 tablespoons of the chimichurri sauce to the shrimp and toss to coat evenly. Let it marinate for about 10 minutes (optional for more flavor).

Step 3: Cook the Shrimp

  1. Heat a skillet or grill pan over medium-high heat and add 1 tablespoon of olive oil.
  2. Once the pan is hot, add the shrimp in a single layer. Cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque.
  3. Remove from heat and transfer the shrimp to a serving platter.

Step 4: Toss with Chimichurri and Serve

  1. Drizzle more chimichurri sauce over the cooked shrimp, tossing to coat.
  2. Serve warm, garnished with fresh parsley or cilantro if desired.
