2 cloves garlic, minced
For the Braised Tomatoes:
-
2 tbsp olive oil
-
1 pint cherry tomatoes (or 2 cups diced tomatoes)
-
½ tsp salt
-
½ tsp black pepper
-
1 tsp balsamic vinegar
-
1 tsp honey or sugar (to balance acidity)
-
½ cup chicken broth (or vegetable broth)
-
¼ tsp crushed red pepper flakes (optional)
-
½ tsp dried basil (or 1 tbsp fresh basil, chopped)
For Serving:
-
1 large ball of burrata cheese (or 2 small)
-
¼ cup fresh basil, torn
-
1 tbsp extra virgin olive oil (for drizzling)
-
Crusty bread, pasta, or rice
Instructions
Step 1: Prepare the Chicken
-
Pat the chicken dry with paper towels and season both sides with salt, black pepper, oregano, and red pepper flakes.
-
Heat 2 tbsp olive oil in a large skillet over medium-high heat.
-
Add the chicken and sear for 4-5 minutes per side until golden brown.
-
Remove the chicken from the skillet and set aside.
Step 2: Braise the Tomatoes
-
In the same skillet, add another 2 tbsp olive oil.
-
Toss in the cherry tomatoes and season with salt and black pepper.
-
Let the tomatoes cook for about 5 minutes, stirring occasionally, until they start to blister and soften.
-
Add the minced garlic, balsamic vinegar, honey, and red pepper flakes, stirring to combine.
-
Pour in the chicken broth and simmer for 5-7 minutes until the sauce thickens slightly.
Step 3: Return the Chicken
-
Nestle the seared chicken back into the skillet, making sure it’s partially submerged in the sauce.
-
Cover and let it simmer on low for 8-10 minutes, or until the chicken is fully cooked (internal temperature should be 165°F).
Step 4: Add the Burrata & Garnish
-
Remove the skillet from heat and place the burrata on top of the hot braised tomatoes.
-
Let it sit for a couple of minutes so the cheese softens slightly.
-
Sprinkle fresh basil over the dish and drizzle with extra virgin olive oil.
Step 5: Serve & Enjoy!
-
Serve warm with crusty bread for dipping, over pasta, or with a side of roasted vegetables.
Notes
Sear the Chicken Well – A golden crust locks in moisture.
Use Fresh Tomatoes – Cherry tomatoes give a sweet and tangy burst of flavor.
Let the Burrata Soften – Placing it on the hot dish allows it to become ultra creamy.
Balance the Acidity – A touch of honey or sugar mellows out the tartness of the tomatoes.
Don’t Skip the Basil – Fresh basil enhances the dish with a fragrant, herbal touch.
