Description

The acidity of the tomatoes balances beautifully with the richness of the burrata, creating a dish that’s comforting yet fresh. Serve it with crusty bread, pasta, or a light salad for a well-rounded meal.


Ingredients

For the Chicken:

  • 2 large boneless, skinless chicken breasts (or 4 small)

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp dried oregano

  • ½ tsp red pepper flakes (optional, for heat)

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

For the Braised Tomatoes:

  • 2 tbsp olive oil

  • 1 pint cherry tomatoes (or 2 cups diced tomatoes)

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 tsp balsamic vinegar

  • 1 tsp honey or sugar (to balance acidity)

  • ½ cup chicken broth (or vegetable broth)

  • ¼ tsp crushed red pepper flakes (optional)

  • ½ tsp dried basil (or 1 tbsp fresh basil, chopped)

For Serving:

  • 1 large ball of burrata cheese (or 2 small)

  • ¼ cup fresh basil, torn

  • 1 tbsp extra virgin olive oil (for drizzling)

  • Crusty bread, pasta, or rice


Instructions

Step 1: Prepare the Chicken

  1. Pat the chicken dry with paper towels and season both sides with salt, black pepper, oregano, and red pepper flakes.

  2. Heat 2 tbsp olive oil in a large skillet over medium-high heat.

  3. Add the chicken and sear for 4-5 minutes per side until golden brown.

  4. Remove the chicken from the skillet and set aside.

Step 2: Braise the Tomatoes

  1. In the same skillet, add another 2 tbsp olive oil.

  2. Toss in the cherry tomatoes and season with salt and black pepper.

  3. Let the tomatoes cook for about 5 minutes, stirring occasionally, until they start to blister and soften.

  4. Add the minced garlic, balsamic vinegar, honey, and red pepper flakes, stirring to combine.

  5. Pour in the chicken broth and simmer for 5-7 minutes until the sauce thickens slightly.

Step 3: Return the Chicken

  1. Nestle the seared chicken back into the skillet, making sure it’s partially submerged in the sauce.

  2. Cover and let it simmer on low for 8-10 minutes, or until the chicken is fully cooked (internal temperature should be 165°F).

Step 4: Add the Burrata & Garnish

  1. Remove the skillet from heat and place the burrata on top of the hot braised tomatoes.

  2. Let it sit for a couple of minutes so the cheese softens slightly.

  3. Sprinkle fresh basil over the dish and drizzle with extra virgin olive oil.

Step 5: Serve & Enjoy!

 

  1. Serve warm with crusty bread for dipping, over pasta, or with a side of roasted vegetables.

Sear the Chicken Well – A golden crust locks in moisture.
