  • 2 cups fresh spinach, roughly chopped
  • 8 oz (1 block) cream cheese, softened
  • 1/2 cup sour cream or plain Greek yogurt
  • 1/2 cup chicken broth
  • 1 cup shredded mozzarella cheese (plus extra for topping)
  • 1/4 cup grated Parmesan cheese
  • 2 garlic cloves, minced
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika (optional, for a hint of smoky flavor)
  • Salt and pepper, to taste
  • 1 cup breadcrumbs or crushed crackers (optional, for a crunchy topping)
  • 1 tablespoon olive oil or melted butter (for the topping)

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease your baking dish with cooking spray or a drizzle of olive oil.

Step 2: Prepare the Creamy Mixture

  1. In a large mixing bowl, combine the softened cream cheese, sour cream (or Greek yogurt), and chicken broth. Mix until smooth and creamy.
  2. Stir in the garlic, onion powder, paprika, salt, and pepper. Adjust the seasoning to your taste.

Step 3: Combine the Ingredients

  1. Add the shredded chicken, chopped spinach, mozzarella cheese, and Parmesan cheese to the creamy mixture.
  2. Stir until everything is evenly coated.

Step 4: Assemble the Casserole

  1. Spread the chicken and spinach mixture evenly into the prepared baking dish.
  2. If using breadcrumbs or crushed crackers, toss them with olive oil or melted butter and sprinkle evenly over the top.
  3. For extra cheesiness, sprinkle additional mozzarella cheese on top.

Step 5: Bake the Casserole

  1. Bake in the preheated oven for 25–30 minutes, or until the top is golden and bubbly.
  2. Let the casserole cool for 5 minutes before serving.
