Ingredients

Scale
  • 1 lb turkey sausage (ground or pre-cooked)
  • 6 large eggs
  • 1 tablespoon butter or oil (for cooking the eggs)
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder (optional, for added flavor)
  • 1/2 cup bell peppers, diced (optional for extra veggies)
  • 1/2 cup shredded cheddar cheese (or your favorite cheese)
  • 1 tube refrigerated crescent roll dough or biscuit dough
  • 1 tablespoon melted butter (for brushing)
  • 1/2 teaspoon sesame seeds or everything bagel seasoning (optional for topping)

Instructions

  1. Cook the Turkey Sausage
    • Heat a skillet over medium heat and cook the turkey sausage, breaking it apart into crumbles. Cook until browned and fully cooked. Set aside.
  2. Scramble the Eggs
    • In a bowl, whisk the eggs with a pinch of salt, pepper, and garlic powder (if using).
    • Heat the same skillet with 1 tablespoon of butter or oil. Scramble the eggs over medium heat until just set. Remove from heat and let cool slightly.
  3. Combine the Filling
    • In a large mixing bowl, combine the cooked sausage, scrambled eggs, diced bell peppers (if using), and shredded cheese. Mix until well combined.
  4. Assemble the Rolls
    • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
    • Roll out the crescent roll or biscuit dough and separate it into individual triangles or sections.
    • Place a spoonful of the egg and sausage mixture onto the wider end of each triangle. Roll them up, tucking the ends as needed to seal.
  5. Bake the Rolls
    • Arrange the rolls on the baking sheet, leaving space between them. Brush the tops with melted butter and sprinkle with sesame seeds or bagel seasoning if desired.
    • Bake for 12-15 minutes, or until the rolls are golden brown and fully cooked.
  6. Cool and Serve
    • Let the rolls cool for a few minutes before serving. Enjoy them warm, with extra cheese or a side of hot sauce if you like!

Notes

  • Don’t Overfill: Avoid overstuffing the dough to keep the rolls from bursting during baking.
  • Make-Ahead Option: Prepare the filling the night before and assemble the rolls in the morning.
  • Customize: Add diced onions, spinach, or mushrooms to the filling for more flavor and nutrition.
